Awww shucks, a new 35-seat oyster and rosé bar is opening at The Hollywood Roosevelt from May 2. The Rosy Oyster brings neon accents, site-specific artwork from Amit Greenberg and a hipster-meets-luxury wine list to the hotel’s iconic poolside hideaway.
Model-turned-sommelier Lelañea Fulton—also known as the woman behind the wine list at New York’s Dirty French—has hand-picked an approachable list of wines both by the bottle and the glass, making sure to include a little something for everyone. Lelañea told Teller last week that guests can expect, “an extensive rosé program with about ten rosé wines by the glass as well as a plethora of high acid whites and playful reds, a huge focus on grower champagne, fun orange wine, vermouth, and sherry.”
The food menu features a diverse, rotating selection of oysters to pair with your chosen beverage. Choose between fresh Marin Miyagi, Kumamotos, Beau Soleil or Wellfleet oysters, either straight up or served with a rose champagne mignonette, kimchi mignonette, grated horseradish or a wedge of lemon. Small plates include halibut crudo, a spiced shrimp cocktail and lobster rolls with tarragon aioli and kettle chips. For those not in pursuit of shelfishness, the cold-fried picnic style chicken wings are the go.”
The Rosy Oyster opens on May 2. You can sip and slurp poolside Tuesday through Saturday, from 6—close. The space seats 35 guests and is first come, first serve.
